Chicken Cacciatore

3 whole chicken breasts, split
1 Bermuda onion, cut into 6 slices
1 envelope (1 1/2 oz.) spaghetti sauce mix
1 (1 lb.) can tomatoes

Brown chicken breast in a large non-stick skillet; arrange in single layer in an 8-ounce shallow casserole. Top each breast with an onion slice. Blend spaghetti sauce mix into drippings in skillet; stir in tomatoes. Bring to a boil, stirring constantly.

Spoon around chicken breast and onions. Cover casserole. Bake in 350 degree oven 1 hour or until chicken is tender. (tried and true)

Baked Cavatelli

8 ounces dried cavatelli
1 14-1/2-ounce can whole Italian-style tomatoes
1/2 of a 6-ounce can (1/3 cup) Italian-style tomato paste
1/4 cup dry red wine or tomato juice
1/2 teaspoon sugar
1/2 teaspoon dried oregano, crushed
1/4 teaspoon pepper
1 pound extra-lean ground beef
1/2 cup chopped onion
1/4 cup sliced, pitted ripe olives
1/2 cup shredded part-skim mozzarella cheese (2 ounces)


1. Cook pasta according to package directions. Drain well. Set aside. Meanwhile, in a blender container, combine undrained tomatoes, tomato paste, wine, sugar, oregano, and pepper. Cover; blend until smooth. Set aside.

2. In a large skillet, cook ground beef and onion until beef is no longer pink. Drain well. Stir in tomato mixture. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in pasta and olives.

3. Spoon the pasta mixture into a 2-quart casserole. Bake, covered, in a 375 degree F oven for 30 minutes. Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes more or until heated through.

4. (Or, chill unbaked casserole, covered, in the refrigerator for up to 24 hours. Bake in a 375 degree F oven for 45 minutes. Sprinkle with cheese. Bake, uncovered, 5 minutes more.) Makes 6 main-dish servings or 8 to 10 potluck servings.

Company Pork Chops

8 thick pork chops, about 1 to 1 1/2 inches thick
salt and pepper
paprika
flour
1 teaspoon butter
2 teaspoon olive oil
1 can evaporated milk (12 ounces), undiluted
1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
1 cup sliced fresh mushrooms, about 8 ounces
chopped fresh parsley

Season pork chops to taste with the salt, pepper, and paprika. Dredge chops in flour; brown quickly in skillet in butter and olive oil. Place chops in baking pan and pour evaporated milk over them. Bake for 1 hour at 325°.

Add mushrooms and the condensed cream of mushroom soup; bake an additional 30 minutes. Sprinkle with minced parsley and serve with potatoes or rice and a green vegetable. Serves 8. (tried and true)

Horseradish Mac & Cheese

4 cups cooked elbow macaroni (about 2 cups uncooked)
2 cups (8 oz.) Cabot Aged Cheddar Cheese with Horseradish
1 cup Cabot Cottage Cheese
3/4 cup Cabot Sour Cream
1/2 cup skim milk
2 tablespoons grated fresh onion
1-1/2 teaspoons Cabot Butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg, slightly beaten
Vegetable cooking spray
1/3 cup dry bread crumbs
1 tablespoon Cabot Butter, melted
1/4 teaspoon paprika

In a bowl, stir together macaroni, cheddar cheese, cottage cheese, sour cream, skim milk, onion, butter, salt, pepper and egg. Spoon into a 2-quart casserole dish coated with cooking spray. Combine bread crumbs with butter and paprika.
Sprinkle over casserole. Cover and bake at 350° for 30 minutes. Uncover, bake five minutes or until set. Garnish with oregano.

Barbecue Pork Sandwiches Recipe

3 pounds (approx.) Pork Roast
1 package Lipton onion soup mix
1 cup water
Barbecue Sauce
Sliced American cheese


Trim as much fat off the the pork roast as possible. Place in the crockpot. Mix package of soup mix with cup of water and pour over roast. Leave in crockpot for 10 hours on low. Take most of the juices out of crockpot leaving about 1/2 cup.

Shred pork roast and pour Barbecue sauce over, stir and let it warm up about 10 minutes. Serve on Hamburger Buns or Steak Rolls with cheese slices. (tried and true)

Pasta and Sausage

16 ounces uncooked fettuccini
1 teaspoon blackening seasoning
1 tablespoon brand pepper sauce
1/4 cup parsley, chopped
1 (1-lb) pkg. smoked sausage, cut into 1/4-inch slices
1 (16-oz.) jar alfredo sauce


1. Cook fettuccine according to directions. Drain and return pasta to pot.

2. Meanwhile, sprinkle smoked sausage with blackening seasoning; place in large skillet over medium heat and cook until lightly browned, about 5 minutes. Stir in alfredo sauce, brand pepper sauce, and parsley and heat through.

3. Pour over pasta and toss until well coated. (tried and ttue)

Crusty Parmesan Wings

1 c Grated Parmesan cheese
1/2 c Dry fine bread crumbs
1 1/2 ts Paprika
3/4 c Golden Italian dressing
3 lb Chicken drummettes or whole
-wings

Combine cheese, bread crumbs and paprika in small bowl.
Stir well.
Pour dressing into another small bowl.
If using whole wings, discard tips.
Cut wings apart at joint.
Dip each piece into dressing then coat with cheese mixture.
Place on greased or foil-lined baking tray.
Bake, uncovered, in 350 F oven for about 45 minutes until tender.
Serve warm.
These may be prepared ahead.
Reheat in 350 F oven for about 10 minutes until hot.
Makes about 36-40 pieces. (tried and true)

Creamy Spaghetti & Ham Pie

8 ounces spaghetti, cooked and drained
1 tablespoon oil
2 tablespoons butter
8 ounces mushrooms, sliced
4 green onions, sliced
1 1/2 cups diced ham
3 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese

In a skillet, melt butter with oil; sauté mushrooms until tender. Add green onions and ham; sauté for 2 more minutes. Stir in flour; gradually add broth and milk. Add cheese, stirring until smooth and thickened.

Baked Walleye Fillets

• 2 lb. walleye fillets
• 1/3 c. chopped green onion
• 1/4 lb. mushrooms, sliced (1 cup)
• 1 tsp. salt
• 1/4 tsp. fresh ground white pepper
• 1 tsp. leaf marjoram, crumbled
• 2 Tbsp. dry white wine
• 2 tsp. lemon juice
• 1/4 c. shredded Monterey Jack cheese or mild Cheddar
• 1/4 c. fresh bread crumbs
• 1/2 c. (1 stick) butter or margarine, melted
• 2 Tbsp. chopped fresh parsley

Butter a baking dish, large enough so fish just slightly overlaps. Preheat oven to 400¡F. Spread green onions and mushrooms over the bottom of the dish and place fish over top. Season with salt, pepper and marjoram. Sprinkle with wine, lemon juice, cheese and bread crumbs. Drizzle melted butter over the crumbs. Bake for 4 minutes, then loosely place foil over fillets; do not seal the edges. Bake an additional 7 minutes or until fish is done. (tried and true)

Homemade Cheeseburger Macaroni

1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp. salt
1/2 tsp. white pepper
1 stick (4 Tbsp.) margarine
1/2 box elbow macaroni noodles, slightly undercooked and drained
1/3 pkg. (2 lb.) Velveeta, cubed
Milk

Preparation:
Brown ground beef with onion, garlic, salt and pepper. Drain; set aside.

Melt margarine, add macaroni noodles, cubed Velveeta, and enough milk to come within 1-inch of top of noodles. Simmer until cheese melts.

Add hamburger, cook 5 minutes more and serve.

Notes:
It is important to slightly undercook your macaroni noodles or they will fall apart when you're melting the cheese sauce. (tried and true)
