Cowboy Spaghetti

1 pound spaghetti
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices smoky bacon, chopped
1 pound ground sirloin
1 medium onion, chopped
3 to 4 cloves garlic, chopped
Ground black pepper
2 teaspoons hot sauce, eyeball it
1 tablespoon Worcestershire sauce, eyeball it
1/2 cup beer
1 (14-ounce) can, chopped or crushed fire roasted tomatoes
1 (8-ounces) can, tomato sauce
8 ounces sharp Cheddar
4 scallions, chopped

Heat a pot of water to a boil. Add spaghetti and salt the water. Cook to al dente or with a bite to it.
Heat a deep skillet over medium-high heat. Add extra-virgin olive oil and bacon. Brown and crisp bacon, 5 minutes, remove with a slotted spoon. Drain off a little excess fat if necessary. Leave just enough to coat the bottom of the skillet. Add beef and crumble it as it browns, 3 to 4 minutes. Add onions, garlic and stir into meat. Season the meat with salt and pepper, hot sauce and Worcestershire. Add 1/2 cup beer and deglaze the pan. Cook 5 to 6 minutes more then stir in tomatoes and tomato sauce.

Add hot spaghetti to meat and sauce and combine. Adjust seasonings and serve up pasta in shallow bowls. Grate some cheese over the pasta and sprinkle with scallions. Garnish with crisp bacon

Baked Steak

1 (2 pound) round steak or 1(4 pound) chuck beef roast
Salt, to taste
Pepper, to taste
1 can cream of mushroom soup
1 envelope dry onion soup mix

Place steak or roast which has been seasoned with salt and pepper in a casserole. Pour mushroom soup over steak. Sprinkle with onion soup. Cover tightly with aluminum foil and bake steak at 350 degrees F for 2 hours or bake the roast at 350 degrees F for 3 hours. (tried and true)

Beef Bourgiunon

4 lb lean beef -- cubed
1 c red wine
1/3 c oil
1 ts thyme
1 ts black pepper
8 sl bacon -- diced
2 cloves garlic -- crushed
1 onion -- diced
1 lb mushrooms -- sliced
1/3 c flour

Marinate beef in wine ,oil, thyme and pepper 4 hours at room temperature or overnight in refrigerator. In large pan, cook bacon until soft. Add garlic and onion; saute until soft. Add mushrooms and cook until slightly wilted. Drain beef, reserving liquid. Place beef in slow cooker. Sprinkle flour over the beef, stirring until well coated. Add mushroom mixture. Pour reserved marinade over all. Cook on LOW 8-9 hrs. (tried and true)

To Die for Pot Roast

1 beef roast, any cut, to fit size of crock pot
1 Pkg. Hidden Valley Ranch Dressing mix
1 pkg. brown gravy mix
1 pkg. Italian Dressing mix
1/2 C. water

Combine mixes well and sprinkle over roast in pot. Pour water into bottom of pot. Cook on low for 6-7 hours. (tried and true)

Baked Rigatoni and Ham

1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
4 cups warm milk
12 ounces rigatoni or mostaccioli
2 cups finely chopped fully-cooked ham
2 cups shredded provolone cheese
1 cup freshly grated Parmesan cheese
2 tablespoons butter, melted
1 cup packed soft bread crumbs

In a large saucepan, over medium-low heat, melt the 1/2 cup butter and then stir in flour, salt and pepper. Cook, stirring constantly until smooth. Add milk, stirring constantly. Heat to boiling, stirring constantly, cooking until sauce thickens, about 1 minute; remove from heat.

Cook rigatoni al dente (firm to the bite) or according to package directions; drain well.

Combine sauce with the cooked and drained rigatoni. Place half of the pasta mixture in a well-greased 9-inch baking dish. Sprinkle with evenly with the ham and half the cheeses. Top with remaining half of pasta mixture and then the cheeses.

Toss the 2 tablespoons butter with the bread crumbs and sprinkle evenly over top of casserole.

Bake at 375*F (190*C) for 30 minutes or until hot and top is lightly browned. Let set for 5 minutes before serving. (tried and true)

MEATBALL HERO SANDWICHES

Nonstick vegetable oil spray
1 1/2 pounds lean ground beef
1/2 cup grated Parmesan cheese
2 large eggs
1/4 cup chopped fresh parsley (preferably Italian)
1/4 cup crushed cornflakes
3 large garlic cloves, minced
2 1/2 teaspoons dried oregano
1/2 teaspoons ground white pepper
1/2 teaspoon salt
3 cups purchased marinara sauce

6 long Italian or French rolls, split lengthwise, toasted


Preheat oven to 350°F. Spray heavy large baking sheet with nonstick vegetable oil spray. Combine ground beef, grated Parmesan cheese, eggs, chopped fresh parsley, crushed cornflakes, minced garlic, dried oregano, ground white pepper and salt in large bowl and blend thoroughly. Using moistened hands, shape meat mixture into 1 1/2-inch rounds and place on prepared sheet, spacing evenly. Bake meatballs until just firm to touch and cooked through, about 20 minutes
Bring marinara sauce to simmer in heavy large saucepan. Add meatballs to sauce and simmer until sauce thickens slightly, about 15 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)

Gently press center of bottoms of rolls to compact slightly. Spoon 5 or 6 meatballs into depression in each roll. Spoon enough sauce over to coat. Place tops of rolls over and serve. (tried and true)

Sausage and potato stew

1 tbsp. vegetable oil
2 carrots, cut into chunks
2 stalk celery, sliced
1 medium onion, chopped
1 clove garlic, minced
2 tsp. (10 mL) paprika
6 medium potatoes, peeled and cubed
1-1/2 lbs. (750 g) Polish or other smoked sausage, cut into 1/2-inch (1 cm) chunks
1/2 tsp. (2 mL) salt
1/4 tsp. (1 mL) pepper
3 cups 750 mL) chicken broth

In a large saucepan or Dutch oven, heat the vegetable oil over medium heat. Add the carrots, celery, onion and garlic and cook, stirring, for about 5 minutes or until the onion is beginning to soften.
Add the sausage chunks, paprika, salt and pepper and cook for about 2 minutes, stirring constantly.
Now add the potatoes and the broth and bring to a boil over medium high heat. Cover the pan, lower the heat to medium-low and let simmer for about 20 minutes or until the potatoes are tender.
Makes 6 servings. (tried and true)

Carne Asada

2 beef round (sirloin) tip center steaks, cut 1 inch thick (about 8 ounces each)
Salt

Marinade:
2/3 cup prepared Italian dressing
2 tablespoons chopped fresh cilantro
1 tablespoon chili powder

Toppings:
Chopped fresh cilantro, chopped tomato, sliced avocado, dairy sour cream (optional)

Instructions:
1. Combine marinade ingredients in small bowl. Place beef steaks and marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 1 hour.
2. Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 13 minutes for medium rare doneness, turning once. (Do not overcook.) Season with salt, as desired. Serve with toppings, if desired. (tried and true)

Layered Chicken

4 boned chicken breasts
4 slices bacon
4 large slices Cheddar cheese
4 large slices Swiss cheese
3 tablespoons Parmesan cheese
2 cloves garlic, chopped
pepper to taste
1 teaspoon rosemary

Fry bacon until cooked but still flexible. Place chicken in baking pan and sprinkle with spices. Layer Swiss cheese, bacon and Cheddar cheese over chicken and sprinkle with Parmesan. Cover and cook 30 minutes at 350 degrees. Remove cover and cook additional 15 minutes or until cheese is light golden brown. (tried and true)

Easy Beef Stroganoff

1 lb beef round tip steaks, 1/8" to 1/4" thick
4 cups (5 oz) uncooked wide egg noodles
4 tsp. vegetable oil, divided
1 clove garlic, crushed
1/2. lb sliced mushrooms
1 pkg. (3/4 oz) brown gravy mix
1/4 C sour cream

Cook noodles according to package directions, set aside and keep warm.

Meanwhile stack Beef steaks; cut lengthwise in half and then crosswise into 1"-wide strips.

In large nonstick skillet, heat 2 teaspoons oil over medium-high heat until hot. Add beef and garlic -- 1/2 at a time -- and stir-fry 1 minute or until outside surface of Beef is no longer pink. Do not overcook. Remove from skillet and season with salt and pepper.

In same skillet, cook mushrooms in remaining 2 teaspoons oil 2 minutes or until tender, stirring occasionally. Remove from heat. Stir in gravy mix and 1 cup cold water; bring to a boil. Reduce heat to low and simmer 1 minute or until sauce is thickened, stirring frequently. Return Beef and heat through. Serve over noodles with sour cream. (tried and true)

Lazy Perogie Casserole

15 lasagna noodles
2 cups cottage cheese
1 egg
1/8 tsp. onion salt
1 cup cheddar cheese 2 cups mashed potatoes
1/4 tsp. salt
1/4 tsp. onion salt
1 cup margarine (scant)
1 cup chopped onion

Cook noodles; drain and towel dry. Mix cottage cheese, egg and onion salt. Spread over a layer of noodles in a 9x13" pan. Cover with layer of noodles. Mix potatoes, salt, onion salt, pepper, and grated cheese. Spread over second layer of noodles. Top with third layer of noodles. Melt margarine and sauté onion. Spread over top layer of noodles. Bake 30 minutes at 350° F. covered. Let stand 10 minutes before cutting. Serve with sour cream.

Basil Tomato Tart

1 pie crust
1½ cups shredded mozzarella cheese
5 Roma or 4 medium tomatoes
1 cup loosely packed fresh basil leaves
4 cloves garlic
½ cup mayonnaise or salad dressing
¼ cup grated Parmesan cheese
1/8 tsp. ground white pepper

Place pie crust in 9 inch quiche dish or glass pie plate. Pre-bake according to package directions. Remove from oven. Sprinkle with ½ cup mozarrella cheese. Cool.

Cut tomatoes into wedges (or slices). Drain on paper towels. Arrange tomatoes in pie shell. In a food processor bowl combine basil and garlic. Process until coarsely chopped. Sprinkle over tomatoes. Combine remaining mozzarella cheese, mayonnaise, Parmesan cheese, and pepper in a medium bowl. Spoon cheese mixture over basil mixture, spreading to evenly cover the top. Bake in a 375 degree oven for 35 to 40 minutes or until top is golden and bubbly. Serve warm. If desired, sprinkle with basil leaves. Makes 8 appetizer or 4 main dish servings.

German Gulash

1 1/2 pounds lean stew meat
1/2 teaspoon salt, pepper, paprika, parsley
1 large onion
2 cups mushroom
1 cup white flour
1 tablespoon Crisco
3 cups water or beef Bouillon

Cut onion fine, put in hot Crisco oil, fry golden brown. Then add meat, salt, pepper, paprika, parsley and fry it until brown. Add water or beef Bouillon. Simmer until meat is tender. Add mushroom and make white flour sauce for gravy. Taste for flavor. Serve with German dumplings or potatoes (tried and true)

The Westerner Steak Sandwich

4 beef sirloin strip steaks or ribeye steaks, cut 1/2-inch thick
2 tsp. McCormick Montreal Steak Seasoning
1/2 cup salsa
1/2 cup sour cream
1/2 cup green onions, chopped
4 oblong shaped rolls, split and toasted
-- leaf lettuce


Mix salsa, sour cream and green onions to make sandwich spread.
Season both sides of steaks with Montreal Steak Seasoning.

Grill steaks over medium coals for 6-7 minutes, turning once after 4 minutes. Or, pan fry over medium-high heat for 6 minutes, turning occasionally.

Spread rolls with 2 Tbsp. of spread per side. Top with lettuce leaf and sizzling steak.

Close sandwich and serve immediately. (tried and true)

Chicken ala Shelley

1 lb. skinned boneless chicken breasts, cut into 1/2 inch pieces
2 tbsp. lemon juice
1 tbsp. olive oil
1/2 c. diced onion
1 tsp. minced garlic
2 c. large mushrooms, sliced
1/2 c. chopped parsley
1 tsp. minced celery leaves
2 small bay leaves
1 1/2 tsp. dried corriander
1 tsp. oregano
1 tsp. basil
1/2 tsp. nutmeg
1/2 tsp. thyme
1/4 tsp. white pepper
1/4 c. white wine (optional)
1 can Chicken broth
4 oz. softened cream cheese
1/4 cup parmesean or romano cheese
1/2 c. cream
2 tbsp. flour
1 tsp. paprika
Thin egg noodles

1. Marinate chicken in lemon juice for 5 minutes.

2. In a large skillet, cook onions and garlic over medium heat for 5 minutes. Drain marinade and add chicken.

3. Add mushrooms, parsley, celery leaves, and herbs, spices and pepper. Cook 3 minutes, stirring occassionally.

4. Add wine, simmer 5 minutes. Stir in chicken broth. Cook uncovered for 15 minutes. Stir in cream cheese and parmesean cheese.

5. Mix milk and flour. Add.

6. Sprinkle with paprika and serve over noodles.
