Cheesy Potato Beef Bake

1 pound ground beef
2 4-ounce cans mushrooms drained (optional)
2 5 1/4-ounce packages au gratin potatoes
4 cups boiling water
1 1/3 cups milk
2 teaspoons butter
1 teaspoon salt
1/2 teaspoon seasoned salt
1 cup shredded cheddar cheese

1. In a skillet over medium heat, cook beef until no longer pink; drain. Place in a greased 13x9 inch baking pan. Top with mushrooms.

2. Combine potatoes and contents of sauce mix packets, water, milk, butter, salt, seasoned salt and pepper. Pour over beef and mushrooms.

3. Cover and bake at 400 degrees for 20 minutes or until heated through. Sprinkle with cheese. Bake, uncovered, for 5 minutes or until cheese is melted. Let stand 10 minutes before serving.

"Highway 50" corned beef hash

2 md Potatoes, Peeled (About 12 oz)
1 lb Cooked Corn Beef
1 md Onion
1 t Salt
5 ea To 6 Tbls Butter Or Regular Margarine
6 ea To 12 Large Eggs, Depending On The Diners Appetites

In a medium-size saucepan over high heat, bring the potatoes and enough water to cover, to a boil and reduce the heat to medium -low and simmer, covered, 30 minutes until the potatoes are tender when pierced with a sharp knife. Drain and let stand until cool enough to handle. Meanwhile, finely chop the corn beef and onion then finely chop the cooled potatoes. Place in a large bowl and toss to mix well. Season the mixture with salt and shape into 6 large patties each about 1/2-inch thick. In a 12-inch skillet over medium heat, melt 1 Tbls of the butter and add 2 patties cooking until browned on both sides. Remove from the skillet to a heated platter and keep warm. Repeat the procedure with the remaining patties, using an additional 2 Tbls of butter for them. Wipe out the skillet and return to medium heat. Melt 2 Tbls of butter in the skillet and fry the eggs in batches to the desired degree of doneness, adding more butter if necessary. Top each patty with a fried egg and serve immediately with buttered toast and jelly.

Easy Pasta Casserole

1 large green pepper, diced
1 large onion, diced
2 oz. (1/2 stick) margarine
1 teas. garlic powder
1 lb. assorted pasta (wheels, shells, spirals, ziti)
1/2 lb. pepperoni − sliced thin − then cut in half
8 oz. mozarella cheese (shredded)
1/2 lb. hamburger (browned)
1/2 lb. italian sausage (browned)
1 − 16 oz. jar meat flavored Prego sauce

Melt margarine over medium high heat in a skillet. Add onions, peppers, and garlic powder. Saute for about 4 minutes. Meanwhile, cook pasta according to box directions. Heat sauce and combine with cooked hamburger and cooked sausage. Use cooking spray to lightly grease an 11 X 13 casserole dish. Place 1/2 of the cooked pasta in the dish, followed by 1/2 the vegetables, 1/2 of the pepperoni, and 1/2 sauce. Repeat another layer. Spread mozzarella cheese over top. Bake at 350F for about 45 minutes or until cheese is melted. Serves 4

Chicken Croquettes

2 1/2 cups finely chopped chicken
1 cup finely chopped celery
1/2 cup finely chopped onion
1 tsp. allspice
1/2 cup milk
1/2 cup chicken broth
3 tbsp. butter
3 tbsp. flour
1/2 cup breadcrumbs
3 tablespoons oil

white sauce: In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add flour and cook, stirring for 1 to 2 minutes without browning. Salt and pepper to taste. Gradually whisk in milk and chicken broth, stirring constantly, until smoothed and thickened. Remove from heat and let cool for 10 minutes. In a large bowl, blend chicken, celery, onion, and allspice. Add cooled white sauce and blend. Salt and pepper to taste. Let chill in refrigerator for 2 hours or overnight. Shape chicken croquettes into 2-1/2" balls and roll in breadcrumbs. Heat oil in large skillet and fry chicken croquettes until browned. Approximately 15 minutes. You can at this point put the croquettes in the oven to keep them warm. Place the croquettes on a cookie sheet and cover with foil and place in a 200 degree warmed oven to keep warm until ready to serve.

SAUCE FOR CROQUETTES AND POTATOES:

2 tablespoons butter
2 tablespoons flour
1 cup milk
1 cup chicken broth

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add flour and cook, stirring for 1 to 2 minutes without browning. Gradually whisk in milk and broth, stirring constantly, until smoothed and thickened.

Chicken Wings Appetizer

15 chicken wings
1/3 cup of soy sauce
1 tsp of ground ginger
2 minced garlic cloves
2 minced green onions
2 tbsp of honey
2 tsp of vegetable oil
Directions:

Combine all ingredients, except for chicken, in a seperate bowl. Smother chicken in sauce and place in crock pot.

Cook on LOW for 7 hours.

'Mama Can I Have More' Pork Chops

4 thick pork chops
1 tbsp vegetable oil
1 package taco mix
1 (4oz) jar peach preserves
2 (8oz) jars salsa

Coat the pork chops with taco seasoning. Heat the vegetable oil in a skillet over medium-high heat. Add pork chops and saute' until brown; drain drippings. Pour 1/2 the peach preserves and 1/2 of the salso in the bottom of the slow cooker. Arrange the chops over the salsa. Add the remaining preserves and salsa and cook on Low for 5 hours. Serves 4.

Cheddar-Stuffed Chicken Breasts

4 boneless skinless chicken breast halves (1 1/4 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
3 ounces Cheddar cheese
1 tablespoon butter or margarine, melted
1/4 cup salsa
Chopped fresh cilantro, if desired


1 . Heat oven to 375°F. Spray square pan, 9x9x2 inches, with cooking spray. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper. Sprinkle with salt and pepper.
2 . Cut cheese into 4 slices, about 3x1x1/4 inches. Place 1 slice cheese on center of each chicken breast half. Roll chicken around cheese, folding in sides. Brush butter over chicken rolls. Place chicken, seam sides down, in pan.
3 . Bake uncovered about 30 minutes or until chicken is no longer pink in center. Serve with salsa. Sprinkle with cilantro.

Pork Chops and Gravy (Crock Pot)

1/2 cup all purpose flour
1-1/2 tsp. dry mustard
1/2 tsp. salt
1/2 tsp. garlic powder
6 (1" thick) lean pork chops
1(10-3/4 oz.) can CONDENSED chicken broth, undiluted
2 Tbsp. vegetable oil

Combine first 4 ingredients in a shallow dish; dredge chops in flour mixture, set aside. Combine remaining flour mixture and chicken broth in slow cooker. Pour oil into a large skillet; place over med-high heat until hot. Cook chops in oil just until browned on both sides; place in slow cooker. Cook, covered on high for 2-1/2 to 3 hours or on low all day; until tender. Serve with hot rice or mashed potatoes. 6 servings

Carne Adovada

3/4 cup New Mexico red chile powder
1 teaspoon cornstarch
2 tablespoons fresh lemon juice
3 cups water
4 pounds beef roast, cut into cubes

In a medium bowl, combine the chili powder, cornstarch, lemon juice and water. Mix together well. Place the meat in a resealable plastic bag with the marinade and turn to coat thoroughly. Marinate in the refrigerator for 6 to 16 hours.
Place in a slow cooker and cook on high setting for about 4 hours, or until the meat is completely cooked and shreds easily.

Serve hot with tortillas, cheese, lettuce, tomatoes, salsa and sour cream. This also works well with a pork roast.

Slow Cooker Turkey with Mushroom Sauce

1 boneless turkey breast (3 lb.) halved
2 tablespoons vegetable oil or margarine
2 tablespoons dried parsley flakes
1/2 teaspoons. dried tarragon
1/2 tsp. salt (optional)
1/8 tsp. pepper
1 jar or can (4.5 oz.) sliced mushrooms, drained (or
1 cup (fresh) 1/2 C chicken boullion
2 tablespoons cornstarch
1/4 cup cold water

Place turkey skin side up in slow cooker, brush with oil, sprinkle with parsley, tarragon, salt & pepper. Top with mushrooms. Pour broth over all. Cover & cook on low for 7-8 hours. Remove turkey and keep warm. Skim fat from juices. In a saucepan stir cornstarch and cold water. Gradually stir in juices, bring to boil, stir for 2 minutes or until thickened. Serve over turkey.

Baked Ziti

1 pound dry ziti pasta
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

Dilled Oyster Crackers

1/2 cup oil
1 tablespoon dillweed
1 pkg Ranch dressing
16 oz pkg oyster crackers.

Mix first three ingredients in a bowl.
Add crackers and toss to coat

Serve as a snack.

Potatoes Ranchero

1/4 C butter
1/4 C flour
2 C milk
1 tsp. salt
1/4 tsp. pepper
3/4 C chopped green onions
6 C sliced, cooked potatoes
1 green pepper, cut into rings
1/2 C BBQ sauce
8 or 9 oz. sharp cheddar cheese, grated

Peel, slice and cook potatoes until fork tender; drain and set aside.

Make cream sauce (see instructions below) from butter, flour, milk, salt and pepper. Add onions and cheese, stir to melt cheese.

Alternate layers of potatoes and cheese sauce in 12"x8" baking dish (lightly greased). Top with green pepper rings and BBQ sauce. Bake at 350F for 25-30 minutes. Cover loosely with foil while baking.

TO MAKE CREAM SAUCE: Melt butter in pan or skillet over medium heat. Add flour and blend. Add milk while stirring. Keep stirring until thickened, using a whisk. Add salt and pepper.

Bacon Wrapped Garlic Asparagus Bundles

4 cloves minced garlic
1 tablespoon chopped fresh parsley
1/4 cup olive oil
1 lb fresh asparagus
1/2 lb raw bacon
salt and black pepper

Saute garlic and parsley over low heat, then set aside to steep.
Remove ends from asparagus that are tough.
Lay 4 stalks of asparagus in the center of each strip of bacon and sprinkle with salt and pepper.
Drizzle garlic oil over each bundle.
Wrap bacon around the stalks and secure with a toothpick.
Place asparagus bundles on baking sheet and bake at 400° for 20 minutes or until asparagus is tender and bacon is crisp.

Slow Cooker BBQ Pork Sandwiches

1 pork tenderloin, plain or peppered (You can get them pre-packaged at the meat counter)
1 bottle BBQ of your favorite sauce
1 onion, sliced
pepper to taste

1 package sandwich rolls

Rinse the pork tenderloin and cut in half (if needed) to fit in the crockpot. Slice onion and add to the crock pot with the tenderloin. Pour entire bottle of BBQ sauce over the meat, add some water to the bottle and shake to get the remaining sauce and pour into the crockpot. Add pepper to taste. Cook on low for 8 hours in the crockpot.
When meat is cooked, shred with a fork, stirring the meat so it is completely covered with sauce. Pile the meat on sandwich rolls and enjoy.

Cream Cheese Crockpot Chicken

1 Frying chicken; cut up*
2 tb Melted butter
Salt and pepper to taste
1 pk Dry Italian salad dressing seasoning mix
1 cn Cream of chicken soup
1 8 oz brick of cream cheese; cut up in cubes
1/2 c Chicken broth
1 lg Onion
Crushed garlic to taste

* I use boneless, skinless chicken breasts.

Brush chicken with butter and sprinkle with the dry
Italian seasoning mix (I did two layers in my crockpot
to make sure that the Italian seasoning got on all the
chicken and not just those pieces on top.)

Cover and cook on low for 6-7 hours.

About 45 minutes before done, brown the onion in the
butter and then add the cream cheese, soup, and
chicken broth to the saucepan. Add the crushed garlic
and stir all ingredients until smooth. Add salt and
pepper to taste.

Drain some of the liquid in the crockpot (about half)
and pour sauce mixture over chicken in crockpot and
cook an additional 30-45 minutes.

Remove chicken to platter and stir sauce before
ladling some over the chicken and serving the rest in
a gravy boat.

Serve over pasta.

Kentucky Fried Chicken Cole Slaw

8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

1. Be sure cabbage and carrots are chopped up into very fine pieces (about the size of rice).

2. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat until smooth.

3. Add the cabbage, carrots, and onion, and mix well.

4. Cover and refrigerate for at least 2 hours before serving. Serves 10-12.

Strawberry Fruit Dip

1 (8 ounce) package strawberry-flavored cream cheese
1 (7 ounce) jar marshmallow creme

In a medium bowl, mix the strawberry-flavored cream cheese and marshmallow creme until well blended. Chill in the refrigerator approximately 1 hour before serving.

Green Beans with New Potatoes

3 pounds fresh green beans
1/4 pound salt pork, sliced
1/4 cup bacon grease
2 cups chicken broth, plus more if needed
2 to 3 teaspoons House Seasoning, recipe follows
12 small red potatoes
1 onion, cut into slivers
1/2 stick unsalted butter, sliced
Ground black pepper

Remove the ends from the beans. Snap the beans in 2 pieces, place into a colander, wash, and set aside to drain.
Meanwhile, in a large cast iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the broth and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.

While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth, if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add the butter and season with pepper.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Italian Beef Dippers

1 can (18.5 ounces) ready-to-serve French onion soup
1/2 teaspoon dried Italian seasoning
3/4 pound thinly sliced Italian- or garlic-seasoned cooked roast beef
6 crusty French rolls (each 3 to 4 inches long)
6 slices ( 3/4 ounce each) provolone cheese

Special equipment
6 custard cups

Pour the soup into a saucepan. Measure out the Italian seasoning. Toss it in the saucepan. Mix the soup and the seasoning.

Heat the soup over medium heat until it is hot. Stir every once in a while. Add the slices of beef to the soup. Continue to heat for 4 to 6 minutes, until soup and beef are heated all the way through. Stir every once in a while so it doesn't stick to the bottom of the pan.

Use a serrated knife to cut the French rolls in half sideways on the cutting board. Use a slotted spoon to remove the slices of beef from the soup. Put the beef on the bottom halves of the rolls. If you like onions, put a few onions from the soup on the beef.

Cut each slice of cheese into two pieces. Put two pieces of cheese on top of the beef on each sandwich. Cover the beef and cheese with the top halves of the rolls.

Scoop out 1/3 cup soup and put it in one of the custard cups. Put the same amount of soup in each of the other custard cups. (If there's any soup left over, divide it into the cups.) Serve the sandwiches with the warm soup for dipping.

Makes 6 servings.

Beef Steak Gyros

1 pound beef shoulder top blade (flat iron) steaks
1 teaspoon dried oregano leaves, crushed
1 teaspoon minced garlic
Salt and pepper
4 pita breads, cut crosswise in half, warmed
Tomato and sweet onion slices

Yogurt Sauce:
1 cup plain lowfat yogurt
1/4 cup diced cucumber
1 large glove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper

1. Combine yogurt sauce ingredients in small bowl; cover and refrigerate.
2. Combine oregano and garlic; press evenly onto beef steaks. Heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook 13 to 15 minutes for medium rare to medium doneness, turning twice.
3. Carve steaks into thin slices; season with salt and pepper, as desired. Serve beef in pita pockets with tomatoes, onion and yogurt sauce.

Summer Sausage Stew

2 tbsp. Olive oil
1 lb. Italian sausage
1 medium Onion, sliced
2 cloves garlic, chopped
3 Bell peppers, seeded and sliced
1(28oz) can chopped tomatoes
2 C. Water
1 C. small pasta
1/4 C. Chopped fresh basil

Heat the oil in a large skillet with a lit over medium heat. Add the sausage and onion and cook until the sausage is brown and the onions are tender. Add the garlic and peppers and cook for 2 minutes more. Add the tomatoes, water, psta, and basil to the pot and raise the heat until the liquid boils. Turn the heat to medium low, cover ad simmer for 25 minutes or until the sausage is cooked and the pasta is tender.

Apricot and Mustard Glazed Ham Steak

1 (1 pound) lean bone-in ham steak
1/4 cup apricot preserves
1 teaspoon minced garlic
2 teaspoons Dijon mustard

Heat broiler. Spray broiler pan with nonstick cooking spray. Cut outer edge of fat on ham diagonally at 1-inch intervals to prevent curling. (Do not cut into ham.)
Place ham steak on broiler pan. Stir remaining ingredients together in a small bowl. Spread half of glaze over steak.
Broil about 6 inches from heat for 5 minutes or until glaze is bubbly and edges are beginning to brown.
Turn steak and spread with remaining glaze.
Broil an additional 5 minutes or until glaze is bubbly and beginning to brown.

Tomato Pie

1 (9 inch) unbaked pie shell
2 eggs, beaten
1 cup whole milk
1 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon dried parsley
1 1/2 tablespoons dried minced onion
1/2 cup cottage cheese
5 plum tomatoes, diced
1 1/4 cups shredded Swiss cheese

Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, whisk together eggs, milk, salt, basil, parsley, onion flakes and cottage cheese. Spread tomatoes evenly across bottom of pastry shell, then sprinkle with Swiss cheese. Pour egg mixture over cheese.
Bake in preheated oven for 45 minutes, until set in center.

BOSTON MARKET MEAT LOAF

1 egg
2 tbs. sour cream
2 tbs. ketchup
2 tbs. flour
1 pkg. dry onion soup mix
1 lb. ground beef
Ketchup for coating outside of loaf
1/3 c. spicey V-8 juice

Put first 5 ingredients into blender; blend till smooth. Combine with
meat and mix well. Put into greased loaf pan and cover with foil and
bake at 400?, for about 40 min. Take out and cover top with ketchup.
Pour V-8 around edge and bake another 40 min.

French Beef au Gratin

8 ounces Fettuccine, cooked according to package directions
1/2 cup butter or margarine
4 cups sliced white onions
1 pound sirloin steak
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
4 cups beef broth
1 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese

In a large skillet melt butter and saute thinly sliced white onions until browned, about 15 to 20 minutes. Remove the onions.

To the skillet add sirloin steak cut into 1/2-inch cubes. Brown well then return the onions to the pan.

In a small bowl combine flour, salt, and pepper. Add to the skillet and stir until blended. Gradually add beef broth and cook for 10 minutes.

Pour over the cooked fettuccine and top with mozzarella cheese and Parmesan cheese. Broil until the cheese is melted and browned, about 5 minutes.
Makes 4 servings.

Chicken Roll Ups

10 pack flour tortillas
2 tablespoons salsa, any kind
1 small can chicken
2 cups shredded cheddar cheese
6 ounces sour cream

Mix all ingredients except tortillas together. You may need to add a little more salsa or a little more sour cream to your tasting. Spread mixture over a tortilla and roll it up cut into bite size pieces.

Fresh Salsa

3 large whole tomatoes, or 28 ounce can seasoned diced tomatoes
1 can (4 ounces) chopped green chilies
1/2 cup thinly sliced green onions
1 tsp. grated lemon peel
1/4 tsp. salt
1/2 tsp. oregano leaves, crushed
1/8 tsp. pepper
2 tablespoons lemon juice

Drain tomatoes if canned, chop and seed if fresh. In bowl combine all ingredients, mixing well. Cover and refrigerate several hours to blend flavors. Serve with tortillas chips.

Karen's Grilled Slow Cooker Ribs

3 1/2 pounds pork loin back ribs
1/4 cup packed brown sugar
1/2 teaspoon black pepper
3 tablespoons liquid smoke
2 cloves garlic, finely chopped
1 teaspoon salt
1 medium onion, sliced
1/2 cup cola
1 1/2 cup barbecue sauce

Spray inside of 4 to 5 quart slow cooker with cooking spray.
Remove inner skin from ribs. Cut ribs into 4-inch pieces. Mix brown sugar, pepper, liquid smoke, garlic and salt; rub mixture into ribs. Layer ribs and onion in slow cooker. Pour cola over ribs.
Cover and cook on low for 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid.
Heat coals or gas grill. Place ribs on grill. Brush with barbecue
sauce. Cover and grill 4 to 6 inches from medium heat for 15 minutes.

Bacon Wrapped Shrimp

14 jumbo shrimp, peeled and de-veined
7 strips bacon, cut in half lengthwise
1/4 cup Butter Flavor Crisco Shortening, melted
1 tablespoon Parmesan cheese
1 close garlic, finely minced
1 teaspoon lemon juice
Lemon twists for garnish

Wrap each shrimp with a bacon slice and secure with 2 wooden picks.
Stir together the Butter Flavor Crisco, cheese, garlic and lemon juice; brush mixture on shrimp.
Place shrimp on a baking sheet and broil, about 5 inches from the heat, for 4 minutes per side or until bacon is crisp.

Boot Kickin' Tortilla Casserole

1 tri-tip, cooked in crockpot
1 large onion
Garlic, however much desired
Chili powder, however much desired
1 can tomato sauce
1 can El Pato Sauce
1 can diced green chiles
1 dozen corn tortillas
1 cup small curd cottage cheese
1 egg
1/2 pound jack cheese
1 cup marble cheese
Sour cream, for garnish
Slivered green onions, for garnish
Chopped tomatoes, for garnish

Sauté onions and garlic. Add green chiles and meat to skillet. Sprinkle chili powder over meat mix and add tomato sauce and El Pato sauce. Simmer for 15 minutes.

While sauce cooks, fry tortillas in hot oil one at a time. Drain on paper towels and cut into quarters.

Beat cottage cheese and egg together and set aside.

Spread 1/3 of meat mixture in bottom of a 9 x 13-inch baking dish.

Layer with jack cheese, half the cottage cheese mixture and half the tortillas. Repeat layers. Top with marble cheese.

Bake uncovered at 350 degrees F for 30 minutes or until heated through and cheese is melted.

Serve topped with sour cream, green onions and tomatoes.

CAYENNE CANDIED BACON

2 teaspoons vegetable oil
1 cup packed light brown sugar
3/4 teaspoon cayenne pepper
1 pound thinly sliced bacon

Preheat the oven to 350 degrees F. Line a broiler pan with aluminum foil, and position broiler rack on top of pan. Lightly coat the rack with the vegetable oil.

Combine the brown sugar and cayenne in a shallow dish, stirring to mix well. Press 1 side of each slice of bacon firmly into the spiced sugar to coat well. Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. If there is any sugar remaining in the dish, sprinkle it on top of the bacon slices evenly. Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes. Transfer to paper towels to drain briefly, then to a plate or serving dish to cool. (Can be made several hours ahead) Serve warm or at room temperature.

Bbq Kielbasa Recipe

1 3lb. pkg. of Kielbasa
1 jar of chili sauce
1 can of crushed pineapple (slightly drained)
1 cup of brown sugar

Cut Kielbasa into 1/2-1" slices.
Mix with all other ingredients in a crock pot or roasting pan.
Heat until warm--about 1hr.
In regular oven at 300°F or crock pot on medium.

This is an appitizer everyone will love and it only takes 10 minutes to prepare!

Crusted Parmesan Chicken Breasts

4 (6 to 7 ounces each) chicken breast halves, boneless and skinless
2 egg whites
2 teaspoons cornstarch
Juice of 1/2 lemon
1 cup coarse dry bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley leaves
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
Zest of one lemon, minced
3 tablespoons olive oil

Preheat oven to 450 degrees F.

Working with one chicken breast at a time, place each between two pieces of plastic wrap with the smooth side down (where the skin used to be). Working from the center to the edges, gently pound each chicken breast with a meat mallet to 1/2-inch thick. You want the smooth side to remain intact while the ragged side receives the impact of the mallet. And since chicken has little connective tissue, it’s important to use gentle strokes when pounding—the meat can tear easily.

In a shallow pie plate, combine egg whites, cornstarch, and lemon juice. Roll chicken in flour mixture to coat all sides.

In another shallow pie plate, combine bread crumbs, Parmesan cheese, parsley, salt, pepper, and lemon zest.

Dip both sides of prepared chicken into the egg/cornstarch mixture. Transfer the chicken to the crumb plate, and pat crumbs on both sides of the chicken. Let chicken air dry on a baking rack for approximately 30 minutes to set crust.

In a large nonstick, ovenproof frying pan over medium-high heat, heat olive oil. Add chicken and cook 3 minutes until golden brown. Carefully flip chicken and then transfer frying pan to oven to finish cooking. Roast chicken in the oven approximately 8 to 10 minutes until a meat thermometer registers an internal temperature of 165 degrees F (juices will run clear when cut with the tip of a knife). Remove from oven.

Transfer chicken onto a serving platter. Reduce liquid left in frying pan by boiling an additional 2 to 3 minutes; pour over the chicken and serve immediately.

Makes 4 servings.

Barbecue Beef Sandwiches

1 Reynolds® Hot Bags® Foil Bag, large size
2 pounds boneless beef sirloin steak, 1/2–inch thick
1 cup thinly sliced onions
1 cup barbecue sauce
2 tablespoons flour
1 tablespoon hot chili powder*
1/2 teaspoon salt
8 sandwich rolls

PREHEAT grill to medium-high or oven to 450°F. PLACE bag in a 1-inch deep pan. Cut steak lengthwise in half and then crosswise into 1/8" thick strips. Combine steak strips, onions, barbecue sauce, flour, chili powder and salt.

OPEN foil bag. Sprinkle flour inside foil bag. Arrange steak mixture in foil bag in an even layer.

TO SEAL, double fold open end of foil bag. Leave bag in pan when transporting to and from grill or oven.

TO COOK, slide foil bag onto grill or leave foil bag in supporting pan and place in oven. GRILL 15 to 20 minutes in covered grill OR BAKE 30 to 35 minutes in supporting pan in oven.

USE OVEN MITTS to cut open foil bag with a sharp knife. Carefully fold back top of foil bag, allowing steam to escape. Stir steak mixture; spoon over sandwich rolls.

*For a spicier sauce add 1 teaspoon hot sauce.

Carne Asada

2 beef round (sirloin) tip center steaks, cut 1 inch thick (about 8 ounces each)
Salt

Marinade:

2/3 cup prepared Italian dressing
2 tablespoons chopped fresh cilantro
1 tablespoon chili powder

Toppings:
Chopped fresh cilantro, chopped tomato, sliced avocado, dairy sour cream (optional)


1. Combine marinade ingredients in small bowl. Place beef steaks and marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 1 hour.

2. Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 13 minutes for medium rare doneness, turning once. (Do not overcook.) Season with salt, as desired. Serve with toppings, if desired.

Slow-Cooked Country Green Beans

1 tablespoon vegetable oil
1 cup chopped yellow onions
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1 (8-ounce) ham hock, scored
1 tablespoon minced garlic
1 1/2 pounds green beans, trimmed and halved

Note: The salt and pepper we used here were suitable for the ham hock we had. However, depending upon the cure of your ham hock, you may require more or less salt. That said, hold off on adding the salt until about halfway through the cooking process.

Add the oil in a medium, heavy saucepan. Add the onion and saute until tender, about 3 minutes. Season with salt, pepper, and cayenne. Add the ham hocks, garlic, and beans. Add enough water to almost completely cover the beans. Bring to a boil, reduce the heat and simmer for 2 hours. Remove from the heat and serve with the cooking liquid.

Stuffed Italian Sandwich

8 ounces mild Italian sausage, cooked and sliced
1 large round hearty bread loaf, unsliced
2 tablespoons Italian dressing
8 slices provolone cheese
2 ounces salami, sliced
1 can (2.25 ounces) sliced black olives, drained
1 slice red onion, 1/2-inch thick
4 slices mortadella
6 tablespoons pizza sauce
6 pepperoncini, drained and sliced
3 ounces pancetta, cooked and sliced
4 ounces sliced turkey
4 ounces sun dried tomatoes in oil, drained and sliced
2 tablespoons BUITONI Refrigerated Freshly Shredded Parmesan Cheese
1 tablespoon BUITONI Refrigerated Pesto with Basil

PLACE bread on baking sheet. Remove top one-fourth of loaf. With fingers, hollow out bread top and bottom without breaking through crust.

SPREAD Italian dressing evenly inside bottom of loaf. Place half of provolone cheese slices across bottom of bread. Layer the following ingredients: salami, olives, sausage, onion, mortadella, pizza sauce, pepperoncini, pancetta, turkey, sun-dried tomatoes, Parmesan cheese, pesto and remaining slices of provolone.

REPLACE top onto bread. Place another baking sheet on top of bread and top with a 5 to 10 pound weighted object. Allow to sit for 30 minutes to 1 hour. Sandwich should be compressed, but not smashed. Cut into wedges and serve.

Salsa Steak Sticks Recipe

1 1/2 lbs. top sirloin steak, cut into 3/4-inch cubes
1 cup medium salsa
1/4 cup vegetable oil
1 1/2 tsp. lemon pepper
1/2 teaspoon seasoned salt
1 teaspoon garlic powder
32 wooden skewers

Mix salsa, vegetable oil, lemon pepper, seasoned salt and garlic powder together in a glass dish or large sealable plastic bag. Marinate beef cubes for 2-6 hours in refrigerator

Thread two beef cubes onto each 4-inch wooden skewer. Grill over medium coals for 5-7 minutes. Turn occasionally.

NOTE: Steak sticks can also be broiled 3-4 inches from heat. Soak wooden skewers in water before threading beef so skewers will not burn.

Hungarian Style Tomato Salad

3 or 4 large juicy fresh tomatoes
1 cucumber peeled, scored with a fork and thick sliced
2 banana peppers sliced or 1 green pepper seeded and chopped
1/8 cup of chopped Italian flat leaf parsley -OR- 1 tsp. of minced fresh dill
1 small peeled onion sliced thin
1 garlic clove minced
3 Tbs. of vinegar
1 tsp. sugar
6 Tbs. of oil
Salt and pepper

Slice the tomatoes and place in salad bowl.
Peel cucumber, score lengthwise and slice.
Slice the banana peppers or chopped seeded green pepper.
Add the chopped parsley or dill, sliced onion, minced clove and toss together.
Add to bowl vinegar, sugar and oil.
Toss again, taste and adjust seasoning by adding salt and pepper if needed.
Let sit for 1/2 hour to mingle flavors.

2 packages miniature smoked sausages (I use Hillshire Farms Lil' Smokies)
1 jar Heinz Chili Sauce
1 jar (16 ounces) grape jelly

Put all the ingredients into a Crock Pot. Stir. Cook on high for 25 to 30 minutes.

Cucumber Salad

3 large cucumbers, thinly sliced
2 teaspoons salt
3 tablespoons fresh lemon juice
1 tablespoon vegetable oil (kosher for Passover)
1 tablespoon sugar
2 tablespoons chopped fresh dill
1/2 cup thinly sliced red onion

Toss cucumber with salt in large bowl. Cover with plate that rests directly on cucumbers; weight down with 1-pound can. Let stand 1 to 2 hours. Drain in colander; rinse well.
Combine lemon juice, oil, sugar, and dill in serving bowl. Mix in onion and cucumber. Refrigerate overnight. Serve cold or at room temperature.

Skewered Beef with Horseradish Sauce

6 ounces Cream cheese -- softened
1/4 cup Sour cream
1 tablespoon Prepared horseradish
2 teaspoons Dijon mustard
1 package Adolph's meat marinade
1/3 cup White vinegar
1/3 cup Water
2 teaspoons Worscestershire sauce
1 1/2 pounds Beef top round steak -- cut Into cubes for kabobs

Preheat grill or broiler. In small bowl, thorughly combine cream cheese, sour cream horseradish, and mustard. Refrigerate until ready to serve.

In medium bowl, throughly combine contents or marinade package with vinegar, water, and Worchestershire sauce.

Place beef cubes in marinade; pierce deeply with a fork.

Marinate 15 minutes, turning occasionallly.

Thread small skewers with meat. Grill or broil beef 5 to 6 inches from heat, 8 minutes per side for medium. Baste with remaing marinade.

Serve beef with horseradish sauce.

Fiesta Steak

2 pounds sirloin, strip loin, or rib steak, 3/4 to 1 inch thick
Fresh garlic
Steak Sauce Marinade:
1 bottle A1 Tex Mex sauce
1/2 cup pineapple juice
1 tablespoon fresh lime juice
1 teaspoon chopped fresh lime peel
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin (optional)
1/4 teaspoon cayenne pepper

In a shallow non-metal dish, place steak. Rub steak with cut garlic. Combine A1 Tex Mex sauce and pineapple juice with remaining ingredients, pour over steak. Marinate meat in refrigerator 20 to 30 minutes. For stronger flavour, marinate longer.
Place steak on grill 3 to 5 inches above medium-hot coals. Grill 5 to 7 minutes per side. Baste often with marinade. Heat any remaining marinade to the boil and simmer 5 minutes. Serve as a dipping sauce.

Beef Stir Fry

1-1/2 lbs. sirloin steak
1/4 cup vegetable oil
1 small onion, sliced
1-1/2 cups diagonally sliced celery
3/4 cup thinly sliced carrots
1 tbsp. cornstarch
1/4 cup soy sauce
1 can (8 oz.) tomato sauce
1 tsp. sugar
1/4 tsp. ground ginger
1 small green pepper, cut in thin strips
1 can (4 oz.) sliced mushrooms, drained
3 cups hot cooked rice

Trim steak and cut into 2-inch long thin strips. Sear in oil in a large skillet or wok over high heat. Separate onion slices and add to skillet along with celery and carrots. Stir and fry until crisp-tender. Blend cornstarch with soy sauce in a small bowl, then stir in tomato sauce and seasonings. Add to skillet. Add green pepper strips and mushrooms to skillet. Stir and fry for 3 to 4 minutes or until the sauce thickens and becomes shiny. Serve over hot cooked rice. Serves 6.
