Chicken Cacciatore

3 whole chicken breasts, split
1 Bermuda onion, cut into 6 slices
1 envelope (1 1/2 oz.) spaghetti sauce mix
1 (1 lb.) can tomatoes

Brown chicken breast in a large non-stick skillet; arrange in single layer in an 8-ounce shallow casserole. Top each breast with an onion slice. Blend spaghetti sauce mix into drippings in skillet; stir in tomatoes. Bring to a boil, stirring constantly.

Spoon around chicken breast and onions. Cover casserole. Bake in 350 degree oven 1 hour or until chicken is tender. (tried and true)

Baked Cavatelli

8 ounces dried cavatelli
1 14-1/2-ounce can whole Italian-style tomatoes
1/2 of a 6-ounce can (1/3 cup) Italian-style tomato paste
1/4 cup dry red wine or tomato juice
1/2 teaspoon sugar
1/2 teaspoon dried oregano, crushed
1/4 teaspoon pepper
1 pound extra-lean ground beef
1/2 cup chopped onion
1/4 cup sliced, pitted ripe olives
1/2 cup shredded part-skim mozzarella cheese (2 ounces)


1. Cook pasta according to package directions. Drain well. Set aside. Meanwhile, in a blender container, combine undrained tomatoes, tomato paste, wine, sugar, oregano, and pepper. Cover; blend until smooth. Set aside.

2. In a large skillet, cook ground beef and onion until beef is no longer pink. Drain well. Stir in tomato mixture. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in pasta and olives.

3. Spoon the pasta mixture into a 2-quart casserole. Bake, covered, in a 375 degree F oven for 30 minutes. Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes more or until heated through.

4. (Or, chill unbaked casserole, covered, in the refrigerator for up to 24 hours. Bake in a 375 degree F oven for 45 minutes. Sprinkle with cheese. Bake, uncovered, 5 minutes more.) Makes 6 main-dish servings or 8 to 10 potluck servings.

Company Pork Chops

8 thick pork chops, about 1 to 1 1/2 inches thick
salt and pepper
paprika
flour
1 teaspoon butter
2 teaspoon olive oil
1 can evaporated milk (12 ounces), undiluted
1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
1 cup sliced fresh mushrooms, about 8 ounces
chopped fresh parsley

Season pork chops to taste with the salt, pepper, and paprika. Dredge chops in flour; brown quickly in skillet in butter and olive oil. Place chops in baking pan and pour evaporated milk over them. Bake for 1 hour at 325°.

Add mushrooms and the condensed cream of mushroom soup; bake an additional 30 minutes. Sprinkle with minced parsley and serve with potatoes or rice and a green vegetable. Serves 8. (tried and true)

Horseradish Mac & Cheese

4 cups cooked elbow macaroni (about 2 cups uncooked)
2 cups (8 oz.) Cabot Aged Cheddar Cheese with Horseradish
1 cup Cabot Cottage Cheese
3/4 cup Cabot Sour Cream
1/2 cup skim milk
2 tablespoons grated fresh onion
1-1/2 teaspoons Cabot Butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg, slightly beaten
Vegetable cooking spray
1/3 cup dry bread crumbs
1 tablespoon Cabot Butter, melted
1/4 teaspoon paprika

In a bowl, stir together macaroni, cheddar cheese, cottage cheese, sour cream, skim milk, onion, butter, salt, pepper and egg. Spoon into a 2-quart casserole dish coated with cooking spray. Combine bread crumbs with butter and paprika.
Sprinkle over casserole. Cover and bake at 350° for 30 minutes. Uncover, bake five minutes or until set. Garnish with oregano.

Barbecue Pork Sandwiches Recipe

3 pounds (approx.) Pork Roast
1 package Lipton onion soup mix
1 cup water
Barbecue Sauce
Sliced American cheese


Trim as much fat off the the pork roast as possible. Place in the crockpot. Mix package of soup mix with cup of water and pour over roast. Leave in crockpot for 10 hours on low. Take most of the juices out of crockpot leaving about 1/2 cup.

Shred pork roast and pour Barbecue sauce over, stir and let it warm up about 10 minutes. Serve on Hamburger Buns or Steak Rolls with cheese slices. (tried and true)

Pasta and Sausage

16 ounces uncooked fettuccini
1 teaspoon blackening seasoning
1 tablespoon brand pepper sauce
1/4 cup parsley, chopped
1 (1-lb) pkg. smoked sausage, cut into 1/4-inch slices
1 (16-oz.) jar alfredo sauce


1. Cook fettuccine according to directions. Drain and return pasta to pot.

2. Meanwhile, sprinkle smoked sausage with blackening seasoning; place in large skillet over medium heat and cook until lightly browned, about 5 minutes. Stir in alfredo sauce, brand pepper sauce, and parsley and heat through.

3. Pour over pasta and toss until well coated. (tried and ttue)

Crusty Parmesan Wings

1 c Grated Parmesan cheese
1/2 c Dry fine bread crumbs
1 1/2 ts Paprika
3/4 c Golden Italian dressing
3 lb Chicken drummettes or whole
-wings

Combine cheese, bread crumbs and paprika in small bowl.
Stir well.
Pour dressing into another small bowl.
If using whole wings, discard tips.
Cut wings apart at joint.
Dip each piece into dressing then coat with cheese mixture.
Place on greased or foil-lined baking tray.
Bake, uncovered, in 350 F oven for about 45 minutes until tender.
Serve warm.
These may be prepared ahead.
Reheat in 350 F oven for about 10 minutes until hot.
Makes about 36-40 pieces. (tried and true)

Creamy Spaghetti & Ham Pie

8 ounces spaghetti, cooked and drained
1 tablespoon oil
2 tablespoons butter
8 ounces mushrooms, sliced
4 green onions, sliced
1 1/2 cups diced ham
3 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese

In a skillet, melt butter with oil; sauté mushrooms until tender. Add green onions and ham; sauté for 2 more minutes. Stir in flour; gradually add broth and milk. Add cheese, stirring until smooth and thickened.

Baked Walleye Fillets

• 2 lb. walleye fillets
• 1/3 c. chopped green onion
• 1/4 lb. mushrooms, sliced (1 cup)
• 1 tsp. salt
• 1/4 tsp. fresh ground white pepper
• 1 tsp. leaf marjoram, crumbled
• 2 Tbsp. dry white wine
• 2 tsp. lemon juice
• 1/4 c. shredded Monterey Jack cheese or mild Cheddar
• 1/4 c. fresh bread crumbs
• 1/2 c. (1 stick) butter or margarine, melted
• 2 Tbsp. chopped fresh parsley

Butter a baking dish, large enough so fish just slightly overlaps. Preheat oven to 400¡F. Spread green onions and mushrooms over the bottom of the dish and place fish over top. Season with salt, pepper and marjoram. Sprinkle with wine, lemon juice, cheese and bread crumbs. Drizzle melted butter over the crumbs. Bake for 4 minutes, then loosely place foil over fillets; do not seal the edges. Bake an additional 7 minutes or until fish is done. (tried and true)

Homemade Cheeseburger Macaroni

1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp. salt
1/2 tsp. white pepper
1 stick (4 Tbsp.) margarine
1/2 box elbow macaroni noodles, slightly undercooked and drained
1/3 pkg. (2 lb.) Velveeta, cubed
Milk

Preparation:
Brown ground beef with onion, garlic, salt and pepper. Drain; set aside.

Melt margarine, add macaroni noodles, cubed Velveeta, and enough milk to come within 1-inch of top of noodles. Simmer until cheese melts.

Add hamburger, cook 5 minutes more and serve.

Notes:
It is important to slightly undercook your macaroni noodles or they will fall apart when you're melting the cheese sauce. (tried and true)

Corned Beef and Cabbage

2-1/4 lbs. whole corned beef brisket
2 lbs. potatoes, peeled
4 carrots, peeled
1 cabbage, cut in wedges
1 cup brown sugar
1/4 cup prepared mustard

Simmer corned beef in a large pot of water 2 hours. Add whole potatoes to boiling water and boil 15 minutes. Add whole carrots to potatoes and boil 10 minutes. Add wedges of cabbage and boil another 20 minutes. Drain. Transfer beef to a baking dish.

Preheat oven to 350°F. Combine brown sugar and mustard in a bowl. Spread over top of corned beef and bake 30 minutes. Slice and serve with vegetables.

This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only. (tried and true)

Hot Chicken Salad

2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 cup grated sharp Cheddar
2/3 cup crushed potato chips

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly

FIVE-SPICE SHRIMP

2 tsp olive oil
1 large onion, chopped
1-inch piece ginger
2 cloves garlic
1/8 tsp chili powder
1 tsp turmeric powder
1 tsp ground cumin
1 tsp ground coriander
2 medium tomatoes, pureed
1 lb large shrimp, shelled and deveined
2 1/2 cups cooked rice
Coriander sprigs

Heat oil in a large sauté pan over medium-­high heat. Sauté onion until golden brown, about 3 minutes. Grind ginger and garlic into a paste; add it and remaining spices and tomatoes to pan; simmer 5 minutes. In a separate pan, sauté shrimp 30 seconds. Add sauce and stir continuously on high heat, 2 or 3 minutes, until most of the liquid evaporates. Serve over rice. Garnish with coriander.

Roast Beef with Horseradish Sauce

1/2 cup heavy cream, whipped
1/3 cup steak sauce
3 Tbsps. horseradish sauce
1/4 cup scallions, sliced
2 tsps. vegetable oil
2 lbs. rump roast

Preheat oven to temperature 325°F. Combine first 4 ingredients in a bowl and refrigerate. Season roast with salt and pepper to taste. Heat oil in a heavy flameproof casserole over medium-high heat. Sauté roast 2-3 minutes until brown on all sides. Transfer to oven and roast 22 minutes per 1 lb for medium rare meat. Cook longer if desired. Let stand 15 minutes before cutting into thin slices and serving with sauce.

Beef Goulash

3 tablespoons vegetable oil
1 pound round steak, cubed
3 medium onions, chopped
1 teaspoon paprika
3/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon granulated sugar
2 cups hot water
1 tablespoon all-purpose flour
1/4 cup cold water
1/2 cup whipping cream
1 (8-ounce) package noodles

Heat oil in a skillet. Add steak and brown well, approximately 10 minutes.
Stir in onions and cook until soft. Sprinkle with paprika, salt, garlic powder, pepper and sugar, blend thoroughly. Pour in hot water; cover, and simmer gently for about 1 1/2 hours.
Blend flour with cold water until smooth. Stir into the meat mixture, and cook until the sauce is thick. Remove from the heat and stir in cream.
Meanwhile, prepare noodles according to package directions; drain.
Serve Beef Goulash over prepared noodles. (tried and true)

Lip Smackin' Smothered Chicken

2 tablespoons vegetable oil
1 cut-up whole chicken (3 to 3 1/2 pounds)
1 1/2 teaspoons salt
3/4 teaspoon black pepper
1/2 medium yellow onion, thinly sliced
3 green onions, cut into 1-inch pieces
1 1/2 cups Gold Medal® all-purpose flour
2/3 cup soy sauce
7 cups hot water
2 teaspoons onion powder


1. Heat oil in deep 12-inch skillet over low heat 5 minutes. Sprinkle chicken with salt and 1/2 teaspoon of the black pepper; place in hot skillet. Cover chicken with yellow and green onions.
2. Cook chicken over medium heat 10 minutes; turn chicken. Cook 10 minutes longer or until golden. Reduce heat to low; cook 5 minutes longer. Turn; cook 5 minutes. Remove chicken from skillet. Place in large pot (Dutch oven); set aside.
3. Continue heating skillet over low heat. Stir together flour, 1/3 cup of the soy sauce and 4 cups of the hot water in medium bowl with wire whisk or fork until smooth.
4. Cook flour mixture in hot skillet over medium heat, stirring constantly with wire whisk or fork, until mixture boils and thickens. Stir in remaining water, 1 cup at a time, stirring after each addition, until smooth.
5. Stir in remaining 1/3 cup soy sauce, the onion powder and remaining 1/4 teaspoon black pepper. Pour gravy over chicken in large pot. Reduce heat to low. Cover and simmer 1 hour, stirring occasionally. (Gravy may stick to pot.)

Crockpot Turkey Tetrazzini

3 3/4 cups cooked, diced turkey
1 1/4 small onion, finely chopped
1/3 cup white wine
2 1/2 cups chicken broth
1 1/4 can (10 oz size) cream of mushroom soup
1 cup blanched slivered almonds
3/4 pound white mushroom, sliced

*Additional Ingredients needed to serve***

parmesan cheese
cooked spaghetti or macaroni


Place all ingredients except parmesan and spaghetti in crockpot. Cover and cook on low for 6-8 hours. Place cooked spaghetti in a greased baking dish. Pour sauce over it and add a generous sprinkling of grated parmesan cheese. Place under broiler until lightly browned. (tried and true)

Cafe Tiramisu's Chicken Saltimbocca

Six ounces of chicken breast - skin off
Half a lemon
Tablespoon of butter
Teaspoon of olive oil
A dusting of flour
2 thin slices of prosciutto
2 thin slices of provolone cheese

Pound chicken breast, thinly
Sauté butter and olive oil in a pan
Lightly dust and flour chicken breast, place it in the pan
Then sauté' until golden brown (medium/high heat)
Top with lemon (diluted with water - 1/2:1/2 ratio)
Keep in pan until lightly thicken and place in baking dish (or plate)
Top it with prosciutto and provolone cheese
Bake in oven 8-10 minutes at 350, or until cheese melts
Optional: Add parmesan cheese to top it off (tried and true)

Crockpot Beef Hash Recipe

2 to 3 cups cut-up cooked beef, leftover roast or cooked stew beef
1 large package (about 32 ounces) frozen hash brown potatoes, thawed
1 cup finely chopped onion
1/4 cup butter, melted
1 1/2 cups leftover or purchased gravy
salt and pepper

T-Bone Steak with Bacon-Mushroom Sauce

5 slices OSCAR MAYER Bacon, cut into 1/4-inch pieces
1 pkg. (8 oz.) fresh mushrooms, sliced
1/4 cup A.1. Original Steak Sauce
1/4 cup dry sherry or water
1 tsp. brown sugar
2 beef T-bone steaks (about 8 oz. each), 1 inch thick

COOK bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 2 Tbsp. of the drippings in skillet. Place bacon on paper towels to drain.

ADD mushrooms to drippings in skillet; cook 5 minutes or until tender, stirring occasionally. Add bacon, steak sauce, sherry and sugar; mix well. Bring to boil. Reduce heat to medium-low; simmer 5 minutes. Cover to keep warm.
GRILL or broil steaks 14 to 16 minutes for medium-rare to medium doneness, turning occasionally. Serve topped with mushroom sauce. (tried and true)

Crockpot Ham and Scalloped Potatoes

8 slices of ham
1 can Cream of mushroom soup
10 med. Potatoes, thinly sliced
1/2 t. cream of tartar
1 cup Grated Cheddar
Paprika
Salt and pepper to taste
2 Onions, thinly sliced

Toss sliced potatoes in 1/2 tsp. cream of tartar and 1 cup water. Drain.

Put half of ham, potatoes, and onions in crockpot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half. Spoon undiluted soup over top Sprinkle with paprika.

Cover and cook on LOW 8 to 10 hrs., or on HIGH 4 hrs. (tried and true)

Chicken and Bacon Fajitas

3 boneless, skinless chicken
breast halves
salt to taste
3 slices peppered bacon, diced
1/2 cup chopped onion
1 chopped green bell pepper
1 chopped red bell pepper 1 1/2 cups chopped
mushrooms
1 cup cherry tomatoes, cut in
half
3/4 cup chopped cilantro
8 large flour tortillas (burrito
size), warmed to soften

DIRECTIONS:
1. Heat a large skillet over medium-high heat. Cook the chicken breasts until the outside is golden brown, and the juices run clear. Salt the breasts to taste, then set aside.
2. Cook the bacon in the hot skillet until it begins to release some oil. Stir in the onion, and bell peppers; cook until the bacon is crispy and the onions are transluscent. Stir in the tomatoes and mushrooms, and continue cooking until the mushrooms have softened.
3. Slice the cooked chicken breasts into bite-sized pieces, then add to the skillet along with the cilantro. Stir to combine, and cook for a minute to reheat. Spoon into warmed tortillas to serve.

Mexican-Style Pasta Bake

12 ounces dried bow tie pasta (about 5 cups)
1/2 cup chopped onion
1/2 cup chopped red sweet pepper
3 tablespoons butter
1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon dried cilantro, crushed
1/2 teaspoon ground cumin
3 cups milk
6 ounces colby cheese, cubed
1-1/2 cups shredded Monterey Jack cheese (6 oz.)
1 cup bottled salsa
2/3 cup halved pitted green and/or ripe olives
Chili powder


1. Preheat oven to 350 degree F. Butter six 12- to 16-ounce individual casserole dishes (or one 3-quart baking dish); set aside. In a 4-quart Dutch oven cook pasta according to package directions. Drain; return to pan. In a large saucepan cook onion and sweet pepper in butter over medium heat about 5 minutes or until tender. Stir in flour, salt, cilantro, and cumin. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Reduce heat to low. Stir in colby cheese and 1 cup of the Monterey Jack cheese; stir until cheese is melted. Pour over drained pasta; stir to combine.

2. Layer half of the pasta mixture, all of the salsa, and the remaining pasta mixture in the prepared casseroles. Sprinkle with remaining 1/2 cup Monterey Jack cheese and olives. Sprinkle lightly with chili powder. Bake, uncovered, 15 to 20 minutes or until bubbly around edges and heated through. (If using large casserole, bake in a 400 degree F oven about 20 minutes.) Let stand 5 minutes before serving. Makes 6 servings.

Pork Chops and Stuffing Bake

4 boneless pork chops (about 1 to 1 1/4 pounds)
4 slices process Swiss cheese
1 package Pork Helper pork chops & stuffing
1 jar (4.5 ounces) sliced mushrooms, drained
1 1/2 cups hot water
1/2 cup hot water
2 tablespoons margarine or butter, melted

Heat oven to 375 F. Place pork chops in ungreased 13x9-inch baking dish; cover with cheese slices. Sprinkle with Stuffing and mushrooms.

Stir together 1 1/2 cups hot water and the Seasoning; pour over stuffing. Stir 1/2 cup hot water and the Gravy Mix with wire whisk until smooth; pour over mixture in dish. Drizzle with melted margarine.

Cover and bake 20 minutes. Uncover and bake 15 to 20 minutes longer or until top is golden brown and juice of pork is no longer pink when centers of thickest pieces are cut or until thermometer reads 160 F. (tried and true)

Cola Chops

8 pork chops
1 cup cola-flavored carbonated beverage
1 cup ketchup
4 tablespoons brown sugar


Preheat oven to 350 degrees F (175 degrees C).
Place pork chops in a 9x13 inch baking dish. In a small bowl, mix together the cola and ketchup. Pour over chops and sprinkle with brown sugar. Bake uncovered for about 1 hour, or until pork is cooked through and internal temperature has reached 160 degrees F (70 degrees C). (tried and true)

Brown Sugar Meat Loaf

3 lbs hamburger or ground chuck (or half of each)
1 stack of crackers, crushed
2 eggs
1 tsp salt
1 tsp black pepper
1 medium onion, chopped
1 tsp worcestershire sauce
2 small cans tomato sauce (one for meatloaf, and 1 for the basting sauce)
1/2 cup brown sugar

In a large bowl, mix the first 8 ingredients well (using only one can of tomato sauce). Spray two baking dishes with favorite cooking spray and create two loaves. Mix one can of tomato sauce with 1/2 cup brown sugar and heat until mixed. Spread all over the meatloaves covering well. Bake for one hour and thirty mins at 350 degrees. (tried and true)

Hong Kong Pork Chops

2 tbsp oil
8 loin pork chops
1 med. onion, sliced thin
4 oz. can mushrooms
3/4 cup water
1/4 tsp garlic powder
4 oz. water chestnuts, sliced
1/2 cup soy sauce1 can beef bouillon
2 tbsp lemon juice
1/2 tsp ground ginger

Brown chops in oil on both sides. Pour off any fat. Arrange onion slices, mushrooms and water chestnuts on chops. Combine remaining ingredients and pour over chops. Cover and bake at 350 degrees for 45 minutes or until chops are tender. Serve over cooked rice. (tried and true)

Sausage-Stuffed Canneloni

1 ½ Cups whole milk ricotta cheese
1 Cup fontina cheese, shredded
¼ Cup parmesan cheese, grated
1 egg
¾ Cup Italian sausage, crumbled
Pinch salt
Pinch pepper
¼ Cup caramelized onions
2 fresh lasagna sheets, 11" X 9", or
8 each manicotti tubes, cooked
2 Cups of your favorite pasta sauce
1 Cup mozzarella cheese, shredded
2 Tbsp. parmesan cheese, grated
Preheat oven to 350 degrees. In a large mixing bowl, combine ricotta, fontina, ¼ cup parmesan, egg, crumbled Italian sausage, salt, pepper, and caramelized onions. Mix well.

Cut the fresh lasagna sheets in half lengthwise to create four long pieces of pasta. Divide the filling into four equal portions and place along one of the longer sides of the pasta. Stretch the filling evenly along the edge of the pasta; the filling should be approximately one inch wide. Roll the pasta sheets lengthwise. Cut each roll in half to create eight cannelloni.

For the cooked manicotti tubes: place the filling in a pastry bag and pipe the filling into the eight manicotti tubes. Tip: if you don't have a pastry bag, a gallon size freezer bag, sealed up, with one corner cut off works well, also.

Pour one cup of your favorite pasta sauce into a 12 X 9 inch baking dish. Place the cannelloni in the dish. Pour the other cup of sauce over the cannelloni. Sprinkle the shredded mozzarella and then the two tablespoons of parmesan over the cannelloni. Place in the oven and bake, uncovered, approximately thirty minutes, or until the top is golden brown and the cannelloni are heated through. (tried and true)

CHICKEN FRICASEE

1 chicken, cut into 8 pieces
1 tablespoon unsalted butter
1 tablespoon olive oil
8 cloves garlic
8 small shallots, peeled
1/2 cup sherry vinegar
1/4 cup chicken broth
1 cup heavy cream
1 lb pasta, cooked
salt and pepper, to taste

In a large skillet, heat oil and melt butter; brown chicken, turning so that skin colors evenly. Chicken does not need to fully cook at this time. Remove chicken from pan and set aside.
Saute garlic and shallots until golden, but not brown. Transfer to dish with the chicken.

Discard fat from pan. Stir in vinegar to deglaze skillet. Return chicken, garlic and shallots and boil until vinegar volume has reduced by half. Add broth, reduce heat, cover pan and simmer over low heat until the chicken is tender and can be pierced easily with a fork, about 40-45 minutes.

Remove chicken, etc from skillet, (leaving broth) and set aside. Cook broth, uncovered, over medium high heat until volume has reduced to a thick, syrupy consistency. Pour in cream and simmer for about 10 minutes (or until desired consistency is achieved) over low heat, being careful not to allow sauce to boil. When done, season to taste with salt and pepper.

Return chicken, etc, to sauce and cook until heated through.

Portion hot pasta on warm plates; top with chicken, then ladle sauce over all. Garnish with a sprinkling of parsley.

Serves 4 (2 pieces chicken per serving). (tried and true)

Cowboy Spaghetti

1 pound spaghetti
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices smoky bacon, chopped
1 pound ground sirloin
1 medium onion, chopped
3 to 4 cloves garlic, chopped
Ground black pepper
2 teaspoons hot sauce, eyeball it
1 tablespoon Worcestershire sauce, eyeball it
1/2 cup beer
1 (14-ounce) can, chopped or crushed fire roasted tomatoes
1 (8-ounces) can, tomato sauce
8 ounces sharp Cheddar
4 scallions, chopped

Heat a pot of water to a boil. Add spaghetti and salt the water. Cook to al dente or with a bite to it.
Heat a deep skillet over medium-high heat. Add extra-virgin olive oil and bacon. Brown and crisp bacon, 5 minutes, remove with a slotted spoon. Drain off a little excess fat if necessary. Leave just enough to coat the bottom of the skillet. Add beef and crumble it as it browns, 3 to 4 minutes. Add onions, garlic and stir into meat. Season the meat with salt and pepper, hot sauce and Worcestershire. Add 1/2 cup beer and deglaze the pan. Cook 5 to 6 minutes more then stir in tomatoes and tomato sauce.

Add hot spaghetti to meat and sauce and combine. Adjust seasonings and serve up pasta in shallow bowls. Grate some cheese over the pasta and sprinkle with scallions. Garnish with crisp bacon

1 (2 pound) round steak or 1(4 pound) chuck beef roast
Salt, to taste
Pepper, to taste
1 can cream of mushroom soup
1 envelope dry onion soup mix

Place steak or roast which has been seasoned with salt and pepper in a casserole. Pour mushroom soup over steak. Sprinkle with onion soup. Cover tightly with aluminum foil and bake steak at 350 degrees F for 2 hours or bake the roast at 350 degrees F for 3 hours. (tried and true)

Beef Bourgiunon

4 lb lean beef -- cubed
1 c red wine
1/3 c oil
1 ts thyme
1 ts black pepper
8 sl bacon -- diced

1 onion -- diced
1 lb mushrooms -- sliced
1/3 c flour

Marinate beef in wine ,oil, thyme and pepper 4 hours at room temperature or overnight in refrigerator. In large pan, cook bacon until soft. Add garlic and onion; saute until soft. Add mushrooms and cook until slightly wilted. Drain beef, reserving liquid. Place beef in slow cooker. Sprinkle flour over the beef, stirring until well coated. Add mushroom mixture. Pour reserved marinade over all. Cook on LOW 8-9 hrs. (tried and true)

1 beef roast, any cut, to fit size of crock pot
1 Pkg. Hidden Valley Ranch Dressing mix
1 pkg. brown gravy mix
1 pkg. Italian Dressing mix
1/2 C. water

Combine mixes well and sprinkle over roast in pot. Pour water into bottom of pot. Cook on low for 6-7 hours. (tried and true)

Baked Rigatoni and Ham

1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
4 cups warm milk
12 ounces rigatoni or mostaccioli
2 cups finely chopped fully-cooked ham
2 cups shredded provolone cheese
1 cup freshly grated Parmesan cheese
2 tablespoons butter, melted
1 cup packed soft bread crumbs

In a large saucepan, over medium-low heat, melt the 1/2 cup butter and then stir in flour, salt and pepper. Cook, stirring constantly until smooth. Add milk, stirring constantly. Heat to boiling, stirring constantly, cooking until sauce thickens, about 1 minute; remove from heat.

Cook rigatoni al dente (firm to the bite) or according to package directions; drain well.

Combine sauce with the cooked and drained rigatoni. Place half of the pasta mixture in a well-greased 9-inch baking dish. Sprinkle with evenly with the ham and half the cheeses. Top with remaining half of pasta mixture and then the cheeses.

Toss the 2 tablespoons butter with the bread crumbs and sprinkle evenly over top of casserole.

Bake at 375*F (190*C) for 30 minutes or until hot and top is lightly browned. Let set for 5 minutes before serving. (tried and true)

MEATBALL HERO SANDWICHES

Nonstick vegetable oil spray
1 1/2 pounds lean ground beef
1/2 cup grated Parmesan cheese
2 large eggs
1/4 cup chopped fresh parsley (preferably Italian)
1/4 cup crushed cornflakes
3 large garlic cloves, minced
2 1/2 teaspoons dried oregano
1/2 teaspoons ground white pepper
1/2 teaspoon salt
3 cups purchased marinara sauce

6 long Italian or French rolls, split lengthwise, toasted


Preheat oven to 350°F. Spray heavy large baking sheet with nonstick vegetable oil spray. Combine ground beef, grated Parmesan cheese, eggs, chopped fresh parsley, crushed cornflakes, minced garlic, dried oregano, ground white pepper and salt in large bowl and blend thoroughly. Using moistened hands, shape meat mixture into 1 1/2-inch rounds and place on prepared sheet, spacing evenly. Bake meatballs until just firm to touch and cooked through, about 20 minutes
Bring marinara sauce to simmer in heavy large saucepan. Add meatballs to sauce and simmer until sauce thickens slightly, about 15 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)

Gently press center of bottoms of rolls to compact slightly. Spoon 5 or 6 meatballs into depression in each roll. Spoon enough sauce over to coat. Place tops of rolls over and serve. (tried and true)

Sausage and potato stew

1 tbsp. vegetable oil
2 carrots, cut into chunks
2 stalk celery, sliced
1 medium onion, chopped
1 clove garlic, minced
2 tsp. (10 mL) paprika
6 medium potatoes, peeled and cubed
1-1/2 lbs. (750 g) Polish or other smoked sausage, cut into 1/2-inch (1 cm) chunks
1/2 tsp. (2 mL) salt
1/4 tsp. (1 mL) pepper
3 cups 750 mL) chicken broth

In a large saucepan or Dutch oven, heat the vegetable oil over medium heat. Add the carrots, celery, onion and garlic and cook, stirring, for about 5 minutes or until the onion is beginning to soften.
Add the sausage chunks, paprika, salt and pepper and cook for about 2 minutes, stirring constantly.
Now add the potatoes and the broth and bring to a boil over medium high heat. Cover the pan, lower the heat to medium-low and let simmer for about 20 minutes or until the potatoes are tender.

Carne Asada

2 beef round (sirloin) tip center steaks, cut 1 inch thick (about 8 ounces each)
Salt

Marinade:
2/3 cup prepared Italian dressing
2 tablespoons chopped fresh cilantro
1 tablespoon chili powder

Toppings:
Chopped fresh cilantro, chopped tomato, sliced avocado, dairy sour cream (optional)

Instructions:
1. Combine marinade ingredients in small bowl. Place beef steaks and marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 1 hour.
2. Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 13 minutes for medium rare doneness, turning once. (Do not overcook.) Season with salt, as desired. Serve with toppings, if desired. (tried and true)

Layered Chicken

4 boned chicken breasts
4 slices bacon
4 large slices Cheddar cheese
4 large slices Swiss cheese
3 tablespoons Parmesan cheese
2 cloves garlic, chopped
pepper to taste

Fry bacon until cooked but still flexible. Place chicken in baking pan and sprinkle with spices. Layer Swiss cheese, bacon and Cheddar cheese over chicken and sprinkle with Parmesan. Cover and cook 30 minutes at 350 degrees. Remove cover and cook additional 15 minutes or until cheese is light golden brown. (tried and true)

Easy Beef Stroganoff

1 lb beef round tip steaks, 1/8" to 1/4" thick
4 cups (5 oz) uncooked wide egg noodles
4 tsp. vegetable oil, divided
1 clove garlic, crushed
1/2. lb sliced mushrooms
1 pkg. (3/4 oz) brown gravy mix
1/4 C sour cream

Cook noodles according to package directions, set aside and keep warm.

Meanwhile stack Beef steaks; cut lengthwise in half and then crosswise into 1"-wide strips.

In large nonstick skillet, heat 2 teaspoons oil over medium-high heat until hot. Add beef and garlic -- 1/2 at a time -- and stir-fry 1 minute or until outside surface of Beef is no longer pink. Do not overcook. Remove from skillet and season with salt and pepper.

In same skillet, cook mushrooms in remaining 2 teaspoons oil 2 minutes or until tender, stirring occasionally. Remove from heat. Stir in gravy mix and 1 cup cold water; bring to a boil. Reduce heat to low and simmer 1 minute or until sauce is thickened, stirring frequently. Return Beef and heat through. Serve over noodles with sour cream. (tried and true)

Lazy Perogie Casserole

15 lasagna noodles
2 cups cottage cheese
1 egg
1/8 tsp. onion salt
1 cup cheddar cheese 2 cups mashed potatoes
1/4 tsp. salt
1/4 tsp. onion salt
1 cup margarine (scant)
1 cup chopped onion

Cook noodles; drain and towel dry. Mix cottage cheese, egg and onion salt. Spread over a layer of noodles in a 9x13" pan. Cover with layer of noodles. Mix potatoes, salt, onion salt, pepper, and grated cheese. Spread over second layer of noodles. Top with third layer of noodles. Melt margarine and sauté onion. Spread over top layer of noodles. Bake 30 minutes at 350° F. covered. Let stand 10 minutes before cutting. Serve with sour cream.

Basil Tomato Tart

1 pie crust
1½ cups shredded mozzarella cheese
5 Roma or 4 medium tomatoes
1 cup loosely packed fresh basil leaves
4 cloves garlic
½ cup mayonnaise or salad dressing
¼ cup grated Parmesan cheese
1/8 tsp. ground white pepper

Place pie crust in 9 inch quiche dish or glass pie plate. Pre-bake according to package directions. Remove from oven. Sprinkle with ½ cup mozarrella cheese. Cool.

Cut tomatoes into wedges (or slices). Drain on paper towels. Arrange tomatoes in pie shell. In a food processor bowl combine basil and garlic. Process until coarsely chopped. Sprinkle over tomatoes. Combine remaining mozzarella cheese, mayonnaise, Parmesan cheese, and pepper in a medium bowl. Spoon cheese mixture over basil mixture, spreading to evenly cover the top. Bake in a 375 degree oven for 35 to 40 minutes or until top is golden and bubbly. Serve warm. If desired, sprinkle with basil leaves. Makes 8 appetizer or 4 main dish servings.

1 cup white flour
1 tablespoon Crisco
3 cups water or beef Bouillon

Cut onion fine, put in hot Crisco oil, fry golden brown. Then add meat, salt, pepper, paprika, parsley and fry it until brown. Add water or beef Bouillon. Simmer until meat is tender. Add mushroom and make white flour sauce for gravy. Taste for flavor. Serve with German dumplings or potatoes (tried and true)

The Westerner Steak Sandwich

4 beef sirloin strip steaks or ribeye steaks, cut 1/2-inch thick
2 tsp. McCormick Montreal Steak Seasoning
1/2 cup salsa
1/2 cup sour cream
1/2 cup green onions, chopped
4 oblong shaped rolls, split and toasted
-- leaf lettuce


Mix salsa, sour cream and green onions to make sandwich spread.
Season both sides of steaks with Montreal Steak Seasoning.

Grill steaks over medium coals for 6-7 minutes, turning once after 4 minutes. Or, pan fry over medium-high heat for 6 minutes, turning occasionally.

Spread rolls with 2 Tbsp. of spread per side. Top with lettuce leaf and sizzling steak.

Close sandwich and serve immediately. (tried and true)

1 lb. skinned boneless chicken breasts, cut into 1/2 inch pieces
2 tbsp. lemon juice
1 tbsp. olive oil
1/2 c. diced onion
1 tsp. minced garlic
2 c. large mushrooms, sliced

1 tsp. minced celery leaves
2 small bay leaves
1 1/2 tsp. dried corriander
1 tsp. oregano
1 tsp. basil
1/2 tsp. nutmeg
1/2 tsp. thyme
1/4 tsp. white pepper
1/4 c. white wine (optional)
1 can Chicken broth
4 oz. softened cream cheese
1/4 cup parmesean or romano cheese
1/2 c. cream
2 tbsp. flour
1 tsp. paprika
Thin egg noodles

1. Marinate chicken in lemon juice for 5 minutes.

2. In a large skillet, cook onions and garlic over medium heat for 5 minutes. Drain marinade and add chicken.

3. Add mushrooms, parsley, celery leaves, and herbs, spices and pepper. Cook 3 minutes, stirring occassionally.

4. Add wine, simmer 5 minutes. Stir in chicken broth. Cook uncovered for 15 minutes. Stir in cream cheese and parmesean cheese.

5. Mix milk and flour. Add.

6. Sprinkle with paprika and serve over noodles.

Food for Thought

Chicken Coverdell

8 chicken breasts, de-boned and skinless
1 package of bacon
1 package of dried beef
1 can of cream of mushroom soup
One 16-ounce container of sour cream
3/4 cup milk

In a rectangular container, spread butter on the bottom. Take the chicken breasts and roll them up and wrap a slice of bacon around each piece, then lay them in a casserole dish. Mix the mushroom soup, about 3/4 of the sour cream, and the milk over low heat. Cut the dried beef into small squares and put about 3/4 of this into the mixture heating. Pour this warm mixture over the chicken and bake at 350 degrees for around 2 hours. Sprinkle the remaining beef on the top and bake for 10 minutes

TURKEY HASH

6 slices bacon, diced
1¾ cups chopped onions, in all
1 cup chopped celery
4 tablespoons unsalted butter
1 tablespoon plus 1¼ teaspoons Chef Paul Prudhomme's Poultry Magic®
2 cups diced peeled potatoes
2½ cups diced cooked turkey
½ cup loosely packed chopped fresh parsley
¼ teaspoon ground nutmeg
Up to 1½ cups chicken or turkey stock, milk, or water


Preheat the broiler.

Cook the bacon in a 12-inch ovenproof skillet over high heat, about 5 minutes. Add ¾ cup of the onions, stir, and cook until the onions start to brown, about 4 minutes. Add the celery, butter, 2 teaspoons of the Poultry Magic, and the remaining onions. Cook, stirring occasionally, about 6 minutes. Stir in the potatoes, beets, turkey, parsley, the remaining 2¼ teaspoons Poultry Magic, and the nutmeg. Cook until the mixture sticks hard to the bottom of the skillet-be careful not to let it burn!-about 7 to 10 minutes. Stir in as much of the stock, milk, or water that is needed to give the hash the consistency you like. It should be easy to stir but not too liquid.

Place the skillet under the broiler until brown and bubbly, about 3 to 4 minutes. Serve immediately with eggs.

Awesome Meatloaf

1 to 2 pounds extra lean ground beef
1/2 cup chopped onion
1 package Stove Top Stuffing Mix, including flavor pack (any variety)
1 can Beef Broth

Mix all ingredients well. Put into a loaf pan. Bake for 45 minutes to 1 hour at 350 degrees F.

Food for Thought

Southwest Mac and Jack

2 tablespoon unsalted butter
1/2 cup onions, finely diced
1/2 cup bell peppers, finely diced (preferably a mixture of yellow, green and red)
1 jalapeño pepper, seeds removed, diced (optional)
3 3/4 cups (1 quart) heavy cream, reduced to 3 1/2 cups*
2 cups (1/2 pound) Pepper Jack or Monterey Jack cheese, shredded
1 cup leftover roasted or boiled chicken, shredded
3/4 teaspoon salt, to taste
1/2 teaspoon freshly ground pepper, to taste
1 pound penne or other pasta, cooked in plenty of salted water according to package directions and drained
1/4 cup chipotle sour cream (recipe below) or regular sour cream
1/4 cup green onions, including green part, sliced thin for garnish


Chipotle Sour Cream:
1/4 tsp pureed chipotles en adobo*
1/4 cup sour cream
*To reduce cream: Place in a large, heavy-bottomed saucepan and bring to a boil. Boil cream about 10 minutes and skim top before adding to recipe. Watch carefully as cream may boil up suddenly.

In a large sauté pan over high heat, add butter (don't wait for it to melt or it will burn), onions and peppers and sauté until vegetables begin to soften and turn golden. Lower heat to medium and continue to cook until the vegetables are very soft, about 4 minutes.

Add reduced heavy cream and bring to a boil over high heat. Lower heat to medium-high and continue to simmer, about 5 minutes.

Add cheese and stir well until the cheese is completely melted. Add shredded chicken and stir with a wooden spoon to combine. Season with salt and freshly ground black pepper.

Continue to simmer another 3 minutes, stirring occasionally.

Toss in cooked, drained pasta and mix well. To serve, top with a dollop of chipotle or regular sour cream and garnish with finely sliced green onions.

Chipotle Sour Cream:

To puree the chipotles en adobo: pour content of the can, including the liquid, into the bowl of a food processor. Puree until smooth. Strain through a fine sieve into a bowl using a rubber spatula to push the puree through. Reserve any unused puree for future use in the refrigerator - it will keep 1 to 2 weeks.

In a small mixing bowl, whisk 1/4 teaspoon of the pureed chipotles en adobo with 1/4 cup of sour cream. Set aside.

* Chipotles en adobo are smoked jalapeos that have been stewed in a vinegar and aromatic vegetable sauce. They are usually available canned in the ethnic food section of the supermarket.

Country Fried Steak

2 pounds flank steak
Salt and pepper
2-1/2 cups flour
Essence spice
2 eggs, beaten with 2 -- tablespoons milk
Vegetable oil for frying
6 ounces finely chopped bacon
1/4 cup minced onions
3 cups whole milk

Cut the flank steak into four equal portions, crosswise. Using a meat mallet, pound out the steak, about 1/4-inch. Season with salt and pepper. Season 2 cups of the flour with Essence. Dredge the steaks in the season flour. Dip the steaks in the egg wash, letting the excess drip off. Dredge the steaks in the seasoned flour, coating each side completely. Add enough oil to a large skillet to fill about 1/4-inch of the pan. Heat the oil. When the oil is hot, carefully lay the steaks in the hot oil. Pan-fry the steaks for 3 to 4 minutes on each side, or until golden. Season with salt and pepper. In another skillet, render the bacon until crispy, about 3 to 4 minutes. Add the onions and continue to sauté for 2 to 3 minutes. Stir in the remaining 1/2 cup of flour and continue to cook for 2 minutes. Season with salt and black pepper. Whisk in the milk and bring the liquid to a simmer, cook the gravy for 3 to 4 minutes. If the gravy is too thick add a little more milk and if too thin, cook a little longer. Remove from the heat and season with salt an black pepper. Spoon the gravy over each steak.

Fish And Chips

Flour 2 cups
Baking powder 1 tablespoon
Cayenne pepper 1/4 teaspoon
Old Bay seasoning 1/4 teaspoon
Dark beer, good quality 1 bottle
Cornstarch For dredging
Fresh firm fish, like cod, haddock, pollock, cut into 1 1/2 inch strips 1 and 1/2 pounds
Baking potatoes, sliced julienne 4 large
Vegetable oil 4 cups
Salt and pepper To taste

1. Place the flour in a large bowl.


2. Add the baking powder, cayenne and Old Bay seasoning. Mix well.

3. Using a whisk, beat the beer into the flour mixture to develop a batter. Cover the batter for 30 minutes.

4. Heat the oil in a large pot set over medium heat and using a thermometer heat it to 350 degrees.

5. Lightly dust the fish in cornstarch, shaking any excess off.

6. Dip in the batter and let drip and gently place in the hot oil. When cooking 2-3 pieces at a time make sure the temperature of the oil is hot so the fish doesn’t get grease soaked.

7. Cook the fish, turning gently for 12-15 minutes depending on the thickness. Drain on paper towels.

8. Add the julienne potatoes to the hot oil and deep fry until golden brown and serve with the fish and malt vinegar.
